Chef Lydia Shire of Weston helped celebrate the Millennium Bostonian Hotel’s 30th birthday, alongside the hotel’s founding team – architect Sy Mintz and developer Arthur Winn.
In 1982, Shire opened Seasons restaurant in the hotel with business partner Jasper White, kick-starting a fine dining revolution in Boston. Beyond its acclaimed dishes, Seasons was the first restaurant in the country to feature an all-American wine list.
Shire credits Winn with giving her the “opportunity of a lifetime” to open Seasons.
“I love seeing how far Boston has come in the culinary landscape, and it is my belief that what we did at Seasons with American food and American wine started something special in Boston,” she said. “Arthur created a culture where great young chefs were encouraged to follow their instincts and introduce new menu items. That is one of the reasons why Boston is the dining Mecca it is today.”
